Monster Pudding Cups


My sister-in-law Kapri made these treats for Halloween many years ago - they are one of our Halloween favorites!

-Kraft

1 square BAKER'S Semi-Sweet Chocolate
2 cups cold milk
6 drops green food coloring
1 pkg. (4-serving size) JELL-O Vanilla Flavor Instant Pudding
8 OREO Cookies, crushed

Melt chocolate in microwave as directed on package. Use a clean small paint brush to paint a monster face on the inside of each of four clear 5-oz. plastic cups with the melted chocolate. Refrigerate until ready to use.

Add milk and food coloring to dry pudding mix in medium bowl. Beat with wire whisk 2 min. or until well blended. Immediately pour into prepared cups.

Top with the cookie crumbs. Refrigerate at least 1 hour before serving. Store any leftover desserts in refrigerator.

Peach Bavarian Jello


This is another one of my favorites that my mom made for us growing up. It's now one of our family favorites. I'm pretty sure this one came from Taste of Home too - gotta love it.

1 can (16 oz.) sliced peaches
2 pkg (3 oz each) peach gelatin
2 cups boiling water
1/8 tsp. almond extract
1 carton Cool-Whip - thawed
Additional peaches, optional

Drain peaches, reserving 2/3 cup juice. Chop peaches into small pieces; set aside. In a bowl, dissolve gelatin and sugar in boiling water. Stir in reserved syrup. Chill until slightly thickened. Stir extract into whipped topping; gently fold in gelatin mixture. Fold in peaches. Pour into a 6-cup mold (spray with Pam). Chill overnight. Unmold; garnish with additional peaches if desired. Yield: 8-10 servings.

Layered Holiday Jigglers


Have you ever made Jello pinwheels? They were my culinary masterpieces in middle school! :) These festive jigglers are my own spin off of the pinwheel recipe and reminiscent of my mom's layered jello. My kids love these!

1 (6 oz.) pkg lime Jello (or flavor/color of choice)
1 cup warm water
3 cups mini marshmallows
1 (6 oz.) pkg cherry Jello (or flavor/color of choice)
1 cup boiling water

Lightly spray 11x17 or 9x13 inch pan with non-stick cooking spray. Mix lime Jello and 1 cup warm water in 2 quart micro-waveable bowl. Microwave on high 1 1/2 minutes. Stir to dissolve completely. Add marshmallows to Jello. Microwave 1 more minute or until marshmallows are almost melted. Stir until completely melted and mixture is smooth (creamy layer will float to top).Pour into prepared pan. Refrigerate 45 minute or until set.

After lime layer has set, mix cherry Jello and 1 cup boiling water, and stir to dissolve completely. Gently pour of over lime/marshmallow layers. Chill until set and cut out shapes with cookie cutters.

Jello Pinwheels



I made these over and over in middle school. All kids adore them and they are a quick pantry-friendly treat!

1 package Jello (4 serving size)
1/2 cup warm water
1 1/2 cups miniature marshmallows (or 12 large)

Lightly spray 8 or 9 inch square pan with non-stick cooking spray. Use a paper towel to spread on bottom and sides. Mix gelatin and water in 2 quart micro-waveable bowl. Microwave on high 1 1/2 minutes. Stir to dissolve completely.

Add marshmallows to gelatin. Microwave 1 minute or until marshmallows are almost melted. Stir until completely melted and mixture is smooth (creamy layer will float to top). Pour into prepared pan. Refrigerate 45 minute or until set.

Loosen edges using knife dipped in warm water. Starting at one end, roll up tightly. With seam-side down, cut into 10 to 12 (1/2 inch) slices. Serve immediately or refrigerate until ready to serve.

Layered Jello Salad


Any jello and fruit combination can be used. Plan for at least 6-8 hours to prep and for the Jello to set. Great served in a trifle or other straight-sided glass bowl so you can see the different layers. Use small packages of Jello and 1/2 the 2nd layer for a small family.

Red, White and Blue Salad

First Layer:
Dissolve a small package raspberry Jello in 1 cup hot water. Cool slightly. Add 1 (16 oz.) can of blueberries* plus all the juice. Let set in a 13x9x2-inch pan. (About 1 hour)
Second Layer:
Soak 1 envelope unflavored gelatin in 1/2 cup cold water. Combine in a small saucepan: 1 cup whipping cream (unwhipped) and 1 cup sugar. Cook over low heat til sugar is dissolved. Remove from heat and add gelatin mixture, 2 cups sour cream and 1 tsp. vanilla. Mix to a cream consistency and pour over first layer and let set.

Third Layer:
Dissolve 1 large pkg. strawberry Jello in 2 cups hot water. Add 2 cups cold water.  Pour over first two layers and let set.


*Not pie filling. Use large pkg. jello if not adding such a large amount of fruit. If not using fruit, follow directions on the package.

Grandpa MacKay's Thanksgiving Jell-O


Although Brandon's Grandpa MacKay passed away before he got to know him, Brandon remembers "Grandpa's Jell-O" always being a part of their Thanksgiving dinner, and we have continued the tradition in our own family.

1 large pkg. Strawberry/banana Jell-O
2 c. boiling water
Mix above until dissoved
Add:
2 bananas, mashed
1 small can crushed pineapple, drained
1 small pkg. frozen strawberries sweetened in juice

Pour 1/2 mixture into 9x13-glass dish, leaving remaining mixture in bowl. Place both in refrigerator until mixture in the dish is firm. Spread sour cream on top and then pour remaining mixture on top. Top with cool whip once Jell-O has set.
